I am a gardener. There couldn't have been a better job for me. Working so closely with nature and doing something meaningfully productive is a really beautiful thing. Creating food that is worthy of the name in the literal sense is an essential process. My aim is to do this in such a way that creative chefs can create something that, for me, has a lot to do with art. Maximum enjoyment requires the highest quality raw materials. I have been trying to provide these for years.
In 2000, I founded the company "Edible Landscapes" together with Ralf Hiener. Today the nursery is called "Schnelles Grünzeug". The range is even more exclusive: edible wild herbs and flowers, rare aromatic herbs, vegetable rarities and wild fruit. In 2017, I expanded the nursery to include another branch of the business and founded the Center for Vegetable Fermentation in the Trebel Valley right next to the cultivation areas. It is the first manufactory in Germany that not only ferments white cabbage, but also other vegetables.
In his guided tour, Olaf Schnelle will present the modern approaches to farming in his market garden and the basics of vegetable fermentation.
