I am a gardener. For me, there couldn't have been a better profession. Working so closely with nature while doing something meaningfully productive is a really beautiful thing. Creating food worthy of the name in the literal sense is an essential process. My concern is to do this in such a way that creative chefs can use it to create something that, for me, has a lot to do with art. The highest pleasure needs the highest quality raw materials. For years I have been trying to make these available.
In 2000, I founded the company "Edible Landscapes" together with Ralf Hiener. Today the nursery is called "Schnelles Grünzeug". The assortment is even more exclusive: edible wild herbs and flowers, rare spice herbs, vegetable rarities and wild fruit. In 2017, I expanded the nursery with a branch of the business and founded the Center for Vegetable Fermentation in the Trebel Valley right next to the cultivation areas. It is the first manufactory in Germany that ferments not only white cabbage, but also other vegetables.
